I am a being of light and endless becoming.
I am a Mum of three beautiful boys from Busselton, Western Australia on a journey to healing.
I have lost over 50 kilos and regained my sparkle by slowly changing to a natural Paleo diet and lifestyle.
I grew up on a remote island in the Kimberly, that was too small to have it’s own hospital, and like most people on the island, we had no phone in the home, or our own car.
I had undiagnosed food allergies, so I got sick frequently with Tonsillitis or Sinusitis, and was prescribed a lot of antibiotics.
I had very strong cravings for sugary foods night and day, and ate to deal with my Anxiety to the point where I became morbidly obese & developed severe and debilitating IBS. When I was pregnant with my second son I developed Gestational Diabetes and, exceeded the weight limit to give birth at my hospital.
I had three babies in the space of five years, and each of them had their own array of medical conditions, and food allergies, repeating the pattern of many doctor visits, and prescriptions of antibiotics and/ or steroids.
Pain, Inflammation, Anxiety, Illness, Drugs, Repeat
I considered getting a colostomy bag, and having lap band surgery, and doing what some doctors had recommended; covering my kids in steroid creams, giving them bleach baths and then when that did not cut it, more antibiotics.
But I did not want this life for my children, I did not want this life for me.
So I started doing my own research to work out WHY was this all happening, and what we could do to get better.
The Paleo Diet and Lifestyle
When Maxwell, my second born, started eating solid food he got sicker and sicker, so his doctor put him on an elimination diet. He recommended I make all of his food from scratch so I could try and work out which foods were making him sick.
I got a Thermomix to make life easier, and one day I was reading a post Jo Whitton, shared from Pete Evans Facebook page about “Gut Health”. At the time I was deeply ashamed and embarrassed about my medical conditions, so I didn’t talk to people about it, and this was the first time I had ever come across the term.
I signed up to the wait list to be one of the the first people to complete The Paleo Way program, which changed the trajectory of our lives.
So many of my questions were answered, and so many more were raised.
I started a Paleo Lunchbox Group on Facebook to try and get ideas and recipes for my kids, and the group became a sounding board for other things too.
Hold On, Help Is On It’s Way
So often when you have medical conditions and food allergies you feel like you are the only one going through it, but I found out through my online community that I wasn’t alone. There are people going through the same or similar thing I am going through, and are happy to offer support and guidance. Through the Paleo Lunchbox Group, I found the most amazing doctor in the city next to mine. He is GP but he has a few other degrees too, he is one progressively smart cookie!
After a thorough investigation our doctor diagnosed us with a Candida Albicans Overgrowth in our intestines, which caused Intestinal permeability, multiple allergies, nutrient deficiencies and medical conditions.
We all got blood tests to help work out what we were allergic to, and it turns out we are allergic to so many different things!
I have trouble finding recipes that work for us, so I started creating my own, and sharing them on my blog. All of my recipes are Paleo and others are aslo AIP, Keto, Low FODMAP, Vegan and/ or Whole30 compliant.
No Added Sugar or Sweeteners
Candida feeds off sugar, that’s what it uses to turn from a beneficial yeast to a harmful fungus.
Since we have a Candida Overgrowth, the more sugar we eat, the more fuel the fungus has to grow and do damage.
Therefore none of my recipes have any added sugar or sweeteners in them, I sweeten my recipes using whole fruits and vegetables which are packed full of nutrients and fibre to help our bodies digest the fructose properly.
I used to be a sugar addict, so it did take some getting used to but now I prefer being sugar free. Foods with added sugar taste too sweet to me now!
As we are healing and becoming less inflamed I am becoming more aware of exactly what is triggering inflammation in our bodies.
When I first started this blog I was using a lot of coconut products, then I discovered my toddler as a sensitivity to coconut.
I liked to use Apple Cider Vinegar in my recipes before our doctor discovered that Max has an Yeast allergy.
Each challenge has forced me to look outside the box and create new recipes using different techniques and ingredients to suit our ever changing needs.
I recently started a Low FODMAP version of the Auto Immune Protocol, and after having a freak out about what to eat, went outside my comfort zone and start experimenting with new herbs, spices and salts.
Yep, having such a restricted diet is hard, but it’s not forever, and it has given me my clarity of mind back!
I didn’t realise how foggy and detached I was until I started AIP. I feel like me again and it’s amazing. Priceless.
The Light At The End of A Long Tunnel
So far I have lost well over 50 kilos on the Paleo Diet, got my clarity of mind back thanks to AIP, and with the help from our doctor my sons skin is clearing up beautifully.
We still have a long way to go, with lots of bumps and challenges along the way, but I can see the light!
