Why Pack a Lunch box?
1. So I know whats in our food
My kids and I have multiple medical issues and long list of food allergies & intolerance’s. While we are healing, eating out or buying take away is more trouble than it’s worth. For starters, most commercial kitchens use seed/ vegetable oils to cook with which are highly inflammatory & will make us sick. So if we are going out, I need to pack enough AIP complaint food to take with us wherever we go. School, picnics, parties, road trips, you name it, if we are leaving home I have got to be prepared.
2. Saves money
Before I slowly started transitioning to a natural Paleo lifestyle I used to eat out a lot and frequently buy take away meals, drinks, snacks and desserts for my family and I. It became an expensive habit. Since we started taking our own food and water wherever we go I have saved so much money! I didn’t realise how expensive takeaways and eating out was!
3. Reduces Waste

Packing our own homemade healthy lunch instead of buying take away or lots of packaged convenience food, is better for the planet because we use less plastic and packaging. Especially since we use “nude food” Bento style lunch boxes. Like Anne Marie suggests, I don’t aim to do zero waste perfectly. I pack a waste free lunch box most days, but when I have run out of fresh food I use some packaged foods like Paleo Bars & Plantain Chips. I always keep a resealable packet of Nori in my car for backups too.
Tips for Packing a Healthy Lunch box
Packing a nourishing and delicious Autoimmune Protocol (AIP) compliant lunch box day after day was a bit mind-boggling at first! I had to find foods that:
1. Are free from dairy (including ghee), grains (including corn), nuts, seeds, nightshades, soy, food additives, refined sugars, refined oils, processed foods, fresh & dried legumes and most spices.
2. Are still edible after being stored in a lunchbox or Thermos container for 4-8 hours.
3. My kids will eat.

Autoimmune Protocol Lunch Box Meal Prep
I have found the most efficient way of packing a nourishing and delicious lunchbox is to be prepared.
Here are some of my tips:
1. Cook extra and pack leftovers for lunch the next day. Especially meats and vegetables.
2. Cook in bulk and freeze. Some Gummies, slices, breads, cakes etc can be stored in the freezer and packed into a lunchbox without reheating. Depending on the temperature outside, they will defrost in time for lunch.
3. Keep snacks in the cupboard; Nori sheets, Tigernuts, Paleobars, Plantain chips etc
Once I have a few tried and true recipes in my fridge & freezer putting everything together is straightforward.
Meal Prep is Self Care
Sundays are usually pretty chilled out in our house. I will usually cook a few things, try a new recipe, freeze some of it, and pack my kids lunch box for the next day. It’s a gift I give to myself. It makes Monday mornings a lot easier and sets the tone for the week.
I pack my kids lunch in a stainless steel Planetbox Rover Lunchbox. Their food is kept cold in an insulated lunchbox bag with one or two ice packs, depending on the weather. Sometimes my kids would rather play than eat at lunchtime. The lunch bag and ice packs keeps their food cold enough so they can enjoy it after school instead.

Freezer Friendly Lunch Box Recipes
Healthy Lunch box recipes that freeze and defrost well. Simply pull out of the freezer the night before hand, or on the day, and pack into the lunch box to thaw.
