Spring has sprung in the South West and my garden is blooming with beautiful red strawberries.
Save Money by Eating Seasonally
Now strawberries are season, it is a lot more affordable to grab a punnet and whip up these Paleo Strawberry and Cream Gummies in the Thermomix.
Gut Healing Goodness
These Gummies are made with only three ingredients; fresh strawberries, gut healing gelatin and coconut cream.
Strawberries are packed full of antioxidants, fibre, minerals and vitamins. They are great for your heart and blood sugar levels.
Coconut cream is a good fat that makes you feel full, gives you energy and helps build up your immune system.
Gelatin is a super food that is brilliant for your gut, bones, joints, skin, hair and nails.
Which Gelatin is the Best?
At the moment there is no organic, Australian made gelatin sourced from Australian, grass fed, grass finished cows, on the market.
So choosing which gelatin is the best for you is a personal choice.
If eating organically is important to you there is the Organic Changing Habits Gelatin Powder. It is made from organically certified Porcine (pigs) that are supplied by a 5th generation family owned business in Europe.
If it is more important to you to buy Australian sourced and made products, I recommend the IQS Gut Lovin’ Gelatin that is made in Australia, from pasture raised Australian cows.
There are a few other brands on the market that I haven’t tried, but I have been told that Peptipro is also very good.
Strawberries and coconut cream are already so naturally sweet, I don’t need to add any extra sugar or sweeteners to this recipe.
I like to make these for my kids and keep them in the freezer for a lunchbox treat, or dip them in Sugar and Sweetener Free Raw Dark Chocolate.

I set these Gummies in the freezer because it is easier to pop them out of the molds when they are frozen.
I store these sweet treats in the freezer in an airtight container, and put them in my kids lunchbox in the morning. After a few hours the Gummies thaw out nicely - just in time for lunch.
